Swirled Berry Yogurt Bark

5 — 41 reviews

This Berry Yogurt Bark is a tasty, high-protein snack made with just a few simple ingredients. Make it in advance and keep it in the freezer for whenever you need a healthy snack or dessert!

Ingredients8-10 servings

  • 3 cups plain whole milk Greek yogurt
  • 1/2 cup frozen mixed berries
  • 1/4 cup pistachios, chopped
  • 3 Tbsp honey, divided
  • 2 Tbsp hemp seeds

Directions

1

In a small bowl, whisk 3 cups of yogurt and 2 Tbsp honey until smooth. In a blender, take 1/2 cup of the yogurt mixture and 1/2 cup of berries and puree until well combined.

2

On a parchment-lined baking sheet, spread remaining honey yogurt mixture in even layer about 1/4” thick.

3

Drop small spoonfuls of berry puree over yogurt and swirl with toothpick. Sprinkle with hemp seeds and pistachios then drizzle with remaining honey.

4

Transfer to freezer for 3-4 hours, until solid, then break into 8-10 pieces. Enjoy cold, straight from freezer.

Notes:

  • Store in the freeze until ready to eat.
  • You can swap out the pistachios or hemp seeds for other nuts or seeds if you wish!

Happy cooking 🥰 ☀️

I hope this recipe works with nonfat Greek yogurt because that’s all I have and is what I’m about to use.

Thanks for helping me make something cold and healthy. I’m even enjoying freezing a yogurt as it comes which is rated good.

I tried it. Yummy. But… For me, it’s not sweet enough. So I may try again but perhaps modify by putting a 1/4 cup of honey in the blend. No honey swirl on top. 3 cups of yogurt sure made a lot of it!!

My brother and I liked these, I like how it was 80-G of protein with the greek yogurt I used for the whole sheet. I feel it definitely needs more sweet. I do have a sweet tooth but I avoid sweets for the most part nowadays, just eat dark chocolate some evenings.

I would say use 5-6 TBSPS honey instead for the main batter and keep the extra honey drizzle on top too. That should help make this taste more like a dessert rather than sour yogurt. The drizzled honey on top was the only part that made it taste sweet at all, but that is of course a very small amount.

I thought the same so my next batch I’ll use 1/4 cups honey in the blend and no swirl of honey on top. I too have a sweet tooth so love having a healthy option on hand. So when it’s very sweet, I’m satisfied after a few bites. So sweeter is for me too!

Can’t wait to try it! We already love and eat those ingredients but not hemp seeds. Haven’t yet tried ’em! So thankful that you’re influencing many to eat right and keep it simple! It’s not difficult to eat right! It’s a lifestyle and had great benefits.
Too many eat fast food with not examining what’s in it or what it can do!

I was able to just go to “file” and then “print” and it printed just the recipe and not all the comments, just fine. When your print window is open, you can instead go to pdf and save as pdf if you just want to save on your computer.

How about this?(I modified some wording, for old fashioned recipe card style):
      Swirled Berry Yogurt Bark
3 cups plain whole milk Greek yogurt
      1/2 cup frozen mixed berries
      1/4 cup pistachios, chopped
      3 Tbsp honey
      2 Tbsp hemp seeds

      1. In small bowl, whisk yogurt & [1 T (?)] honey; until smooth.
      2. Blender: 1/2 cup yogurt mixture & berries; puree until well combined.
      3. On parchment-lined bake sheet, spread remaining honey yogurt mixture in even layer, 1/4” thick.
      4. Sprinkle small spoonfuls of berry puree over yogurt; swirl with toothpick.
      5. Sprinkle with hemp seeds & pistachios; drizzle with remaining honey.
      6. Transfer to freezer; til solid. (3-4 hrs)
      7. Break into 8-10 pieces; enjoy cold, straight from freezer.
      8. Store in the freeze until ready to eat.

-Can swap out the pistachios or hemp seeds for other nuts or seeds if desired!
